i will be procrastinating a bit from actual work so let me finally write the recipe down
base
. poke holes in aubergines, cover with alu foil and chuck in the oven until they turn to mush
. scoop the insides of the aubergines and mash them, chop if they're stringy.
. mix well with strained yogurt (süzme yogurt if you can find it) salt and a few cloves of crushed garlic.
meat
. chop a medium sized onion.
. dice lamb (preferrably) or beef (did it with pork it's ok).
. chuck meat in a pot, cook with a healthy amount of butter until it releases all it's water.
. add onion, salt, paprika powder, black pepper and a little cumin. if you can find, add paprika paste (salça).
. cook on low until all the liquid is gone (30+ minutes)
serve
. see picture above
sauce
. heat up butter in a small pot
. add paprika powder, keep it moving so it doesn't burn, until butter foams up
. pour over the served plate at the table
